Ingredients

1c all purpose flour

1T sugar

1/4t kosher salt

1.5c whole milk

4 large eggs

3T unsalted butter, melted

Preparation

  1. Combine all ingredients in blender and puree until mixture is smooth and bubbles form on top, about 30 seconds. Let batter sit at least 15 minutes at room temp.

  2. Heat a 12-inch nonstick skillet over medium. Lightly coat with butter. Add 1/3c batter and swirl to completely cover bottom of skillet. Cook until underside of crepe is golden brown, 2-3 minutes.

  3. Loosen edge of crepe with a rubber spatula, then use fingertips to quickly flip over. Cook one minute. Slide out of skillet and repeat with remaining batter, coating skillet with more butter as needed.
