Ingredients

2 cups water

½ cup quinoa

½ cup bulgur

3-5 tbsp olive oil

2 cloves garlic

1 lemon

2-3 tsp seasoned rice vinegar

6 oz frozen mixed vegetables

1 head baby bok choy

Preparation

Mix grains water & lemon juice, cover and bring to boil. Reduce heat and let sit for about 5 minutes.

Remove from heat, toss and cover again.

In a large bowl add oil and swirl around to coat all sides.

Add grains and toss, adding more oil if needed. Add veggies. [The heat from the grain will soften the veggies and the grain will quickly cool down].

Add garlic and toss. Add lemon juice & vinegar and toss. Add chopped baby bok choy and toss.

Serve cold.
