Ingredients
1 package of active dry yeast
1 1/2 cups warm water
3 3/4 cups all-purpose or pizza flour, plus flour for dusting work surface
1 tsp sugar
2 Tbs olive oil, plus olive oil for greasing bowl
2 tsp salt
Preparation
In a large mixing bowl, combine the yeast and water. Wait 2-3 minutes for the yeast to rise and then add 1/2 cup flour and the sugar. Mix well. Add the olive oil, salt and remaining 3 1/4 cups flour. With your hands or a large wooden spoon, work the ingredients together. Transfer the dough to a smooth, flour-dusted surface and knead it until the dough is smooth, about 5 minutes. If the dough becomes sticky when kneading, gradually add as much as another 1/4 cup of flour.
Place in a large bowl that has been lightly greased with olive oil. Cover tightly with plastic wrap and allow to double in size, about 1-2 hours.
Divide the dough into 4 pieces and sprinkle each liberally with flour. Roll into balls. Rest the dough and let it rise again for another 1-2 hours before using it for pizza.
