Ingredients

1 tbsp olive oil

1 onion, chopped

2 garlic cloves, minced

1 28 oz. can diced tomatoes

1 8 oz. can tomato sauce

2 tsp oregano

salt and pepper

Preparation

Heat olive oil to shimmering in a large, heavy-bottomed saucepan. Add onion and saute until softened and translucent (4-5 mins).

Add garlic and saute for 30 seconds, stirring constantly to avoid burning.

Add diced tomatoes, oregano, and tomato sauce. Stir well. Simmer for at least 10 minutes (up to an hour over low heat). Season to taste with salt and pepper.

With a hand blender, blend the sauce to the desired consistency.

This makes enough sauce to fill a commercial sauce jar, plus about 2 servings.

VARIATIONS:

  1. Add half a cup of red wine.
  2. Add half a can of artichoke hearts, blended with some of the sauce.
  3. Add Parmesan cheese.
  4. Add 0.5 tsp red pepper flakes.
