Ingredients

1 28-oz can of pureed tomatoes

1 14-oz can of whole or diced tomatoes

2 6-oz can of tomato paste

1 14-oz can tomato sauce

1 medium onion chopped

4-6 cloves garlic pressed

1/2 tsp fresh ground black pepper

1 tbsp dried basil

1 tbsp dried oregano

2-4 tbsp chopped parsley

2 bay leaves

4 tbsp olive oil

1 tsp sugar

1 tsp salt

Preparation

  1. In a large pot, heat the olive oil and fry onion and garlic just until it starts to turn golden.
  2. Add all the cans of tomato products. If using whole tomatoes, chop them first and include the juices.
  3. Add all remaining ingredients.
  4. Simmer the sauce on low heat stirring occassionally so it doesn’t scorch.
  5. Taste the sauce. If it tastes a little sour, add a little more sugar then simmer for at least 10 minutes for the flavors to permeate the sauce.
