Ingredients
1/2 Lb Large, shelled & deveined Shrimp
1 small can minced clams (with juice)
3 Tbl Olive Oil
2 Tbl Butter
1 Clove Minced garlic
2 minced Shallots
1/4 Cup fresh chopped parsley
1/2 cup white wine (sav blanc, etc.)
Fresh pasta (angel hair, linguine, whatever)
1/2 cup fresh grated Parm cheese
Fresh pepper to taste
Preparation
Boile water & prepare pasta accorig to directions
Heat oil and butter in large heavy saucepan med high heat.
Add shallots, and cook briefly until translucent, add garlic, and cook over meduim heat for 2 minutes.
Add shrimp, and stir quickly in butter mixture for 1 -2 miutes, then add minced clams & broth.
Add wine and simmer 2 minutes , until shrimp cooked through. Add parsley
Drain pasta into bowl, add shrimp & sauce and toss together.
Dviide onto 2 plates, tp with parmesan cheese, and fresh pepper to taste
