Ingredients
Fresh spinach leaves
1 Ripe avocado
1/2 yellow onion
olive oil
1 Lime (or a sprinkle of lime juice)
Salt
Pepper
Optional: queso fresco or other wet Mexican cheese
Preparation
Spread some spinach leaves on a plate. Cut avocado in half and remove the pit and peel. I also scrape the ugly brown skin pieces off, but you don’t have to. Cut medium-thin slices of avocado. Place slices on top of plate of spinach. Cut thin slices of an onion, length doesn’t matter. Place slices on top of avocado/spinach. Sprinkle with salt and pepper. Sprinkle with lemon juice and small amount of olive oil. Sprinkle queso fresco on top if you so desire!
