Ingredients

2 lbs small heirloom cherry tomatoes (red, green and yellow ones if possible)

1 cup chopped mint or basil

1/4 cup olive oil

Hot pepper flakes to taste

Cheese (parmesan, feta) optional

Preparation

Heat olive oil in saute pan. Add tomatoes and cook over medium/high heat until they burst.

Lower heat and stir in chopped herbs and hot pepper flakes. Add more oil to make more sauce-like if desired.

Serve over fresh pasta with or without cheese.
