Ingredients

1 lb. kale (washed and torn into bite size pieces.

Note: Spinach can be substituted for kale!

l tbls. butter

6 beaten eggs

1/2 cup Feta Cheese (crumbled)

Pinch of salt.

Preparation

Using a large saute pan, place butter and kale into a heated pan.

Saute kale until very wilted.

Pour beaten eggs on side of pan and scramble. When eggs have set, mix into Kale.

Then sprinkle Feta on top of mixture and cook just until cheese starts to melt. Salt to taste

Eat while warm.
