Ingredients
8 large diced peeled tomatoes
2/3 cups freshly chopped cilantro
2 cups diced green peppers
1 cups seeded jalapeño pepper, minced (leave seeds for spicier salsa)
1 cup diced onion
2 cloves minced garlic
1 1/2 teaspoon salt
2 cups red wine or balsamic vinegar
Preparation
Combine all ingredients in a large pot.
Bring to a boil, reduce heat and simmer 20 minutes.
Refrigerate and enjoy
