Ingredients
2 Tablespoons olive oil
1 medium onion, chopped
3-4 cloves garlic, chopped
4-6 roma tomatoes, chopped
1 Tablespoon each chopped fresh basil, oregano, marjoram and parsley or 1/2 teaspoon of each dried
3 T. balsamic vinegar
1 T. sugar
1/4-1/2 lb. peeled and deviened medium shrimp, tails removed if desired
1/4-1/2 lb. small sea scallops
1/4-1/2 cup crab meat or lobster tail meat, cut into bite size pieces
1/4-1/2 c. black olives
salt and pepper to taste
Hot, Cooked fettucine
Freshly grated parmesan cheese
Preparation
Saute onion and garlic in olive oil until onion is translucent. Add tomatoes, basil, oregano, marjoram, parsley, vinegar and sugar. Simmer until juicy and tomatoes are slightly softened. Add seafood, olives. Cook until shrimp is pink and heated through. Salt and pepper to taste. Serve over hot fettucine. Pass cheese.
