Ingredients

1 1/2 c whipping cream

2 leeks, halved lengthwise and cut into 1/4" slices

2 T fresh chopped thyme

salt & white pepper to taste

1/4 t ground allspice

1/4 t ground nutmeg

1 lb sweet potatoes, peeled and cut into 1/8" crescent slices

1 lb apples, peeled and cut into 1/8" slices

1 c shredded white cheddar

Preparation

Heat oven to 350. Butter 8x8 baking dish.

Bring cream and leeks to boil in large saucepan. Reduce heat, cover and simmer 15 min. Add thyme, s&p, allspice and nutmeg.

Arrange 1/3 potatoes in baking dish. Ladle 1/3 leek mix over. Cover with half apples. Sprinkle with 1/3 cheese. Repeat ending with cheese.

Cover with foil and bake 30 min. Uncover and bake til brown, appx 45 min. Let rest before serving.
