Ingredients
1 cup fine grain cracked wheat
2 bunches fresh parsley, finely chopped
2 cups fresh mint, finely chopped
4 large tomatoes, diced
3 long cucumbers, diced
1/2 cup extra virgin olive oil
Juice of 4 lemons
Salt and pepper to taste
Preparation
Soak wheat in water until soft. Dry wheat by squeezing/pressing between palms of hands. Wheat must be completely dry. Add parsley, mint, tomatoes and cucumbers to wheat. Dress with olive oil, lemon juice and seasonings. Toss thoroughly. Serve scooped into full lettuce leaves.
