Ingredients
12-18 small red potatoes
1/4 cup kosher salt (in shallow bowl)
3 tablespoons olive oil(in shallow bowl)
seasoning mix
*fresh basil leaves (if desired)
Preparation
wash potatoes, remove any eyes or spots boil small red potatoes in water (approx. 5 mins)
- do not over cook, just until tender drain potatoes, allow to cool until dry or pat dry. Roll potatoes in olive oil to cover, sprinkle w/ seasoning (if desired) roll coated potatoes in salt to cover entire surface (shake off excess salt) place on scewers, grill approx. 5 mins. on each side *if you love basil, place a leaf between each potatoe before grilling
