Ingredients

1/2 cup fresh squeezed lemon juice

1/2 cup olive oil

3 tablespoons chopped fresh cilantro

1-1/2 tablespoon minced garlic

Ground black pepper to taste

Crushed red pepper flakes to taste

20 prawns

Preparation

In a large bowl, stir together the olive oil, lemon juice, cilantro, garlic, black pepper and red pepper flakes. Add prawns, and toss to coat. Marinate in the refrigerator for at least 40 minutes. Thread prawns onto skewers, piercing once near the tail and once near the head. About 4 prawns per skewer. Preheat grill on high heat. Lightly oil grill. Grill for 3 to 5 minutes per side, or until opaque.
