Ingredients
Angel Hair Pasta
1 half green zuchinni shredded
3 carrots shredded
1/2 of green pepper sliced thin
1/2 of yellow pepper sliced thin
3 skinless boneless chicken breasts
1/4 Cup Balsamic Vineger
1/4 Cup Soy Sauce
Salt as you like
Pepper as you like
7 medium sized cloves of Crushed Garlic
1 Tbsp Fresh Rosemary
1 Tbsp Fresh Basil
1/2 cup Wine (used Riesling)
1/2 cup extra virgin olive oil
1/4 Red Onion Large sliced thin
1/2 Eggplant sliced thin (french fry cut)
1/2 of 1 broccoli floret ripped into small broccoli heads
Sharp Cheddar Cheese shredded to add to top of finished plate
Preparation
Boil water for Angel hair
Slice chicken into long pieces put in bowl crush garlic over chicken add in balsamic vinegar add in wine add in soy sauce add salt and pepper mix around add rosemary add basil let sit and marinate for 15 minutes
slice red onion and eggplant and rip broccoli - put aside on separate plate
shred/slice or use food processor to make thin long pieces of peppers and carrots and zuchinni heat pan with 2 tbsp of extra virgin olive oil add onions broccoli and eggplant with a lid and cook for 2 minutes
put angel hair in boiling pot to cook
add marinated chicken to onions and eggplant and broccoli- cook at a medium heat with a lid on - stirring occasionally right before pasta is done add in shredded carrots zuchinni and peppers add salt to water
strain pasta when done add touch of olive oil to pasta and stir so the pasta does not stick put pasta on plate and add chicken on top shred some sharp chedder cheese on top and DONE!!
