Ingredients

3 cups mashed cooked sweet potatoes (about 3 or 4 large ones)

1 cup sugar 1 st

ick melted butter

2 eggs slightly beaten

1 tsp. vanilla

1 tsp. cinnamon

1/4 cup sour cream

Topping:

1 stick butter, melted

1 cup brown sugar

1/3 cup flour

1 1/2 cups chopped pecans

Preparation

Preheat oven to 350 degrees. Mix together mashed sweet potatoes, sugar, butter, vanilla, cinnamon, eggs and sour cream. Spread in a casserole dish. Mix together the topping ingredients and sprinkle evenly over the sweet potatoes, covering the top as much as possible. Bake for 25-30 minutes until topping is browned and crunchy.
