Ingredients

1 large eggplant

1 can stewed tomatoes

1 hot banana pepper or hot sauce to taste

1 large onion, diced

2 cloves of diced garlic

Thyme, salt and pepper to taste

A pinch of sugar

Preparation

Slice the eggplant, place it in a dish, salt it and weigh the dish down so that the bitter juices can drain for about 2 hours. Rinse the eggplant and place all of the ingredients in a slow cooker. Cook at medium temperature until the eggplant is tender, about 2-3 hours. Serve and enjoy!
