Ingredients

2-3 large, frozen chicken breast halves, quartered

15 oz. can stewed tomatoes or two large, fresh tomatoes, chopped

2 Tbsp. white wine

1 bay leaf

1/2 tsp. pepper

4 garlic cloves, minced

1 onion, chopped

1/2 cup chicken broth

1 tsp. dried thyme

Lemon juice from 1/2 lemon

1 1/2 tsp. salt

2 cups broccoli, cut into small pieces

1 can garbanzo beans

2 Tbsp capers or sliced olives

Preparation

Put everything in your slow cooker (yep, the chicken can be frozen!) except the broccoli. Set cooker to low for 7-8 hours. 20 minutes before serving, add the broccoli. Serve over rice or with some other starchy side. Yum!
