Ingredients
2 teaspoons hot chili oil (or olive oil)
2/3 cup chopped onion
2 cloves garlic, minced
1 package Smart Ground original (tofu, ground beef style)
1 - 15 oz can tomato sauce
1 cup salsa (deli style, not bottled)
1 - 15 oz can diced, peeled tomatoes
1 to 2 - 15 oz cans black, kidney or pinto beans
1 cup sliced mushrooms
½ cup chopped bell pepper (optional)
1 can diced jalapenos (optional)
dashes hot sauce (optional)
Preparation
- In a large saucepan, heat oil over medium heat. Add garlic and onions and sauté until soft and golden, about 7 minutes.
- Add smart ground, tomato sauce, diced tomatoes and salsa. Simmer over medium heat until bubbling, stirring frequently.
- Add beans and mushrooms. If desired, add bell pepper, jalapenos and hot sauce.
- Simmer over medium heat, stirring frequently, for 20 to 30 minutes. Simmering longer will deepen and mix flavors more thoroughly.
- Serve with grated cheddar, sour cream and/or crusty bread.
