Ingredients

2 teaspoons hot chili oil (or olive oil)

2/3 cup chopped onion

2 cloves garlic, minced

1 package Smart Ground original (tofu, ground beef style)

1 - 15 oz can tomato sauce

1 cup salsa (deli style, not bottled)

1 - 15 oz can diced, peeled tomatoes

1 to 2 - 15 oz cans black, kidney or pinto beans

1 cup sliced mushrooms

½ cup chopped bell pepper (optional)

1 can diced jalapenos (optional)

dashes hot sauce (optional)

Preparation

  1. In a large saucepan, heat oil over medium heat. Add garlic and onions and sauté until soft and golden, about 7 minutes.
  2. Add smart ground, tomato sauce, diced tomatoes and salsa. Simmer over medium heat until bubbling, stirring frequently.
  3. Add beans and mushrooms. If desired, add bell pepper, jalapenos and hot sauce.
  4. Simmer over medium heat, stirring frequently, for 20 to 30 minutes. Simmering longer will deepen and mix flavors more thoroughly.
  5. Serve with grated cheddar, sour cream and/or crusty bread.
