Ingredients

1 1/2 pounds small red potatoes

2/3 cup fat free milk

2 tbsp extra virgin olive oil or butter

1/4 c. shredded fresh Parmigiano Reggiano cheese

1/2 tsp salt

1/2 tsp fresh ground black pepper

Preparation

  1. Place potatoes in a large saucepan and cover with water, bring to a boil. Cover, reduce heat and simmer 15 mins or until potatoes are tender.

  2. Drain potatoes well, return to pan. Add milk and olive oil to hot potatoes and coarsely mash. Fold in cheese, salt and pepper.
