Ingredients
20 roma tomatoes
1-2 loaves thinly sliced french bread
12 oz. goat cheese
3/4 cup olive oil
3 sprigs fresh rosemary plus more for garnish
6 cloves garlic
kosher salt
Preparation
Heat outdoor smoker to 200 degrees. Smoke tomatoes until dry but not crisp (about an hour). Pack cooled tomatoes in mason jars, along with chopped rosemary and minced garlic cloves. Sprinkle with kosher salt to taste and cover all with good quality olive oil. Let sit for a day or so. When ready to serve, slice bread, spread goat cheese on each slice, top cheese with one smoke-dried tomato and garnish with more chopped rosemary.
