Ingredients

1 tablespoon butter

2 leek, split and thinly sliced

2 carrot, finely chopped

1 large onion, finely chopped

1 teaspoon garlic

1 cup lentil

2 cups water

Bouquet Garni

4 cups chicken stock

1/2 pound smoked chicken, cubed

Preparation

  1. Melt butter in large saucepan. Add leeks, carrots, onion and garlic. Cook 4-5 minutes until slightly softened.

  2. Rinse and drain lentils, check for stones. Add to the vegetables with 2 cups water and bouquet garni. Bring to boil, reduce heat and cook for about 30 minutes, or until the lentils are just tender.

  3. Add the chicken, season to taste with salt and pepper. Continue cooking until lentils are done. Remove parsley and bay leaves.
