Ingredients
2-3 lb whole smoked trout skinned, deboned abd fat if any removed
1 8oz pkg cream cheese softened
3 tbsp finely chopped green onions
1 tbsp cappers rinsed
3 tbsp finely chopped red pepper
1 tsp horseraddish
black pepper to taste
enough mayonnaise to make a creamy spreadable mixture
thin sliced dark rye bread or thin sliced pumpernickel toasted
Preparation
In mixing bowl blend cream cheese and mayonaisse until creamy (not runny). Add all other ingredients and mix well.
Cut bread to desired sizes and toast under broiler.
Spread mixture on toast and sprinkle with chopped fresh parsley.
