Ingredients
1 shank style ham (cured)
Apple juice
Bottle sprayer
Preparation
Ready smoker to 325 degrees. Place ham on smoker fat side up and spray liberally with apple juice. Spray ham every 30 minutes. Smoke for 2 to 3 hours. Place ham in aluminum pan fat side down. Poor apple juice in pan about 1/8 inch, cover with foil and cook until internal temp reached 148 degrees. Remove and let rest for 15-30 minutes. A 15 lb ham will take 4-5 hours.
