Ingredients
Non-stick cooking spray
6 eggs, lightly beaten
3-4 tablespoons smoked salmon, coarsely chopped
1 tablespoon fresh dill, chopped fine
Fresh ground pepper to taste
4 10-inch flour tortillas
Sour Cream or Creme Fraiche
Preparation
- Warm the tortillas wrapped in dampened paper towel in microwave on high for 30-45 seconds, until warmed through. Remove from microwave and set aside. Keep wrapped until ready to use.
- Liberally spray large skillet with cooking spray and heat over medium heat 1 minute.
- While heating pan, mix eggs and smoked salmon together in bowl. May add a splash of water to mixture for moisture if desired.
- Add egg mixture to heated pan allowing to set partially before stirring. Stir egg mixture gently until almost cooked through. Add Dill and stir gently into egg mixture until fragrant and egg cooked to desired doneness. Remove pan from heat and add fresh ground pepper to taste.
- Divide eggs between 4 warmed tortillas, top with a dollop of sour cream or creme fraiche, if desired. Roll up tortillas and enjoy while hot! Yum!!
