Ingredients
10 medium red potatoes, scrubbed but not peeled
2 pounds smoked salmon steaks, skin & bones removed & flaked
2 ounces capers, rinsed
1 large red onion, diced
1 cup mayo (miracle whip worked fine, but use less & more sour cream)
1 cup sour cream
sea salt & cayenne
Preparation
In a large pot, cover potatoes & cook in salt water to bring to a boil. Reduce heat & cook until potatoes are tender. Drain, then cut up the potatoes into bit-sized pieces.
In a large bowl, mix the potatoes, salmon, capers, onions, mayo, & sour cream. Add salt & cayenne to flavor.
Cover & refrigerate for at least several hours (overnight best).
