Ingredients
2 cups all-purpose flour
2-1/2 teaspoons baking powder
1/2 teaspoon salt
2 Tablespoons fresh dill, minced
1 egg, well beaten
1/3 cup melted butter
1 cup mayonnaise
3/4 cup milk
1 cup smoked salmon, finely chopped
6 1/2-inch cubes chevre(goat cheese)
Preparation
Preheat over to 400 degrees. Grease or spray large muffin pans well. Sift flour, baking powder and salt into a large bowl. Stir in dill and make a well in the center. Combine beaten egg, melted butter, amyonnaise and milk; stir in chopped salmon. Pour into well in dry ingredients and blend quickly with as few strokes as possible. Fill muffin pans 3/4 full. Bake 25 minutes or until tests done. Cut 1-inch diameter rounds from top of each muffin and insert cheese cube in each muffin. Replace tops allowing cheese to soften. Serve warm.
