Ingredients
1 1/2 Tablespoons butter or low-fat margarine
2 Tablespoons flour
1 1/4 cup milk (can be low-fat)
1/4 cup white wine
1 Tablespoon drained capers
1/2 cup well-drained frozen spinich (optional)
8 oz. block of smoked salmon, chopped
fresh basil, chopped (to taste)
fresh ground pepper
1 lb spinich linguine
Preparation
- prepare pasta: place pasta in boiling water for 10-12 min.
- prepare sauce: melt butter over low heat in medium suacepan. Remove from heat and add flour and stir immediately until flour is absorbed and there are no lumps. Add milk and put back under low heat stirring constatly until flour is mixed in well. Add the wine, continue to stir until sauce thikens. Remove from heat and add capers, salmon, basil, pepper (to taste) and spinich (optional). Stir well and heat just until warm.
- place sauce over pasta and enjoy!
