Ingredients

1/2 lb. smoked trout, skin removed

8 ounces cream cheese

1/2 stick unsalted butter, cut into bits

1 tbsp minced shallot

1 tsp Cognac

1/2 tsp Worcestershire

2 tbsp fresh lemon juice

Preparation

Puree all ingredients in food processor, scraping down sides of bowl as needed. Transfer to small bowl or ramkins, cover with plastic and chill.
