Ingredients
1 Tablespoon olive oil
12 medium shrimp, peeled and deveined
2 roasted red peppers, chopped into 1/2 inch pieces
1/4-1/2 teaspoon hot smoked paprika
1 clove garlic, chopped
1/4 cup white wine
Preparation
Warm olive oil over medium-high heat in a skillet. Add shrimp and cook on one side until bright pink and curled, about 3 minutes. Add peppers, paprika and garlic. Toss together for 2 minutes, until shrimp is almost done. Add wine and boil until reduced by half.
