Ingredients

1 Tablespoon olive oil

1 Cup onion

1 Cup Diced green bell pepper

1/2 teaspoon minced garlic

1 Tablespoon spicy chili powder

4 cups pared sweet potatoes (1/2inch dice)

2 cups kidney beans

1 1/2 cups water

1 1/2 teaspoons Salt

1 teaspoon diced canned chipotle chili with adobo sauce (more if you like it hot & spicy)

Preparation

Place all ingredients in a five to six quart slow cooker. Cook on LOW for 6-8 hours.
