Ingredients

1 Tbsp extra-virgin olive oil

1 lb smoked turkey sausage

Reserved roasted pepper-onion mixture (about 1 1/2 cups)

2 whole-wheat sub or hero rolls (8-inch)

1/2 cup arugula

Hot sauce

Preparation

  1. Heat the oil on medium in a large, heavy skillet until it shimmers. Add the sausage and cover the pan. Cook, turning the sausage links occasionally, until they’re browned and cooked through, 10 to 12 minutes.

  2. Add the pepper-onion mixture to the skillet and continue to cook until the vegetables are hot, 1 to 2 minutes.

  3. While the sausage is cooking, split and toast the rolls. When everything’s ready, fill each roll with a piece of sausage and some pepper-onion mixture and arugula. Add hot sauce to taste.
