Ingredients

2lb poatoes sliced

1 lb bacon, cooked crumbled

1 large slice onion

water to cover

salt and pepper to taste sour cream

chives

Preparation

brown bacon in skillet till cruunchy. remove and drain grease. Leave bits in bottom of pan. Then add sliced potatoes and onions. add water to cover. Put on a lid and simmer until potatoes and onions are soft. remove lid half way through cooking so the liquid reduces. Put in bowl toss with cooked bacon . When you plate dollop with sour cream and chives
