Ingredients

1 10 oz. bag of spinach

1.5 lbs snapper or mild white fish

1 14 oz. diced tomato

3 cloves garlic, chopped

1 tablespoon olive oil

salt and pepper to taste

optional: parmasean cheese

Preparation

saute the chopped garlic in the olive oil.

put the entire bag of spinach in the bottom of a 9x13 baking dish. drizzle the sauteed garlic over the spinach. salt and pepper the fish fillets and place on top of the spinach. top with diced tomatoes, and optionally parmasean cheese. cover with foil and bake for 30 minutes
