Ingredients
2 sticks unsalted butter
1 3/4 C granular sugar
2 large eggs
2 t. pure vanilla extract
4 vanilla beans (optional)
2 2/3 C unbleached flour
2 t. cream of tarter
1 t. baking soda
1/2 t. salt
1/4 t. ground nutmeg
2 t. orange zest
2 t. lemon zest
1 t. lime zest
1 T. ground cinnamon
1/4 t. fresh ginger
On the side have ready cinnamon sugar:
1/4 c sugar and 4 t ground cinnamon
Preparation
Cream until combined: Butter, Sugar
Add: eggs, vanilla extract, the scraped insides of the vanilla beans (op.)
In a separate bowl combine: flour, cream of tarter, baking soda, salt, nutmeg, all zest, cinnamon, and ginger
Combine dry and wet ingredients until dough forms. Do not over mix. Use a #30 scoop to form balls. Roll balls in cinnamon sugar and place on cookie sheet. Press balls down with the bottom of a glass.
Bake at 375 degrees F for 8-11 minutes. They will “poof” and then collapse once they exit the oven.
