Ingredients
4 1/2 cups flour
1 tsp cinnamon (or 1/2 tsp for banana)
1/2 tsp cloves
1/4 tsp ginger
1/4 tsp nutmeg
1 cup pumpkin, banana, applesauce, zucchini or squash
1 tsp baking soda
1 1/2 cups shortening
2 cups sugar
1 egg
1 cup nuts, chopped (or raisins - optional)
Preparation
Sift together flour and spices.
Combine pumpkin (or whatever) with baking soda & set aside. Combine shortening, sugar, and egg. Cream together until light.
Combine shortening mixture with pumpkin (or whatever) mixture.
Gradually add the flour mixture, stirring after each addition.
Stir in nuts.
Drop by teaspoon onto greased sheet. Bake at 350 for 12-14 minutes or until firm to a light touch.
