Ingredients

8 - 10 soft shell crab

1.5 cups milk

1 cup flour

.75 sticks of butter

2 tbsp lemon juice

1/4 cup vermouth or dry white wine

Preparation

Preheat broiling pan sprayed with oil until smoking (5-10 minutes). At the same time, soak all crabs in milk to cover, (30 minutes - 1 hour). Dry. Dredge in flour, season w/ salt and pepper. In a small saucepan, melt 3/4 stick of butter, juice of 1 lemon, 1/4 cup dry white wine (vermouth). Place on hot broiling pan, bottom side up. Broil 5 minutes. Baste, broil 1-2 minutes (until brown). Turn and broil 2 minutes. Baste. Broil 1-2 more minutes, and serve. Don’t put too close together, or they will not be crisp.
