Ingredients
3 tablespoons butter
1/2 cup brown sugar
3 ripe peaches
1/2 cup blueberries
1 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon table salt
8 tablespoons unsalted butter (1 stick), softened but still cool
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1 egg white
1/3 cup whole milk
Preparation
Line springform pan with foil. Smear inside of foil with butter, then melt or soften 3 T of butter in bottom, sprinkle even layer of brown sugar over butter. Layer nicest slices of peaches over brown sugar, inserting blueberries in centers. Make cake: cream the 8 T of butter with sugar, add vanilla, add eggs, then add milk alternately with flour/baking powder/salt mixture. Gently fill cake pan with cake batter, put in solar hot pot for a couple hours or until done. Cool 5 minutes, invert.
