Ingredients
2 Cloves garlic, minced
1 Large onion, chopped
2 Teaspoons olive oil
4 Cups sliced mushrooms
1/2 Teaspoon dried thyme
10 ounces spinach, steamed and rinsed
1 Red pepper
1 cup cherry tomatoes, halved
2 whole eggs
6 egg whites
1 tablespoon fresh dill
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup grated feta cheese
Preparation
Sautee garlic, mushrooms onion and tomato and red pepper until soft (stagger in this order to make sure everything gets to the finish line at the same time).
In a separate pot, cover and cook the spinach with only the water that clings to it from rinsing. Remove when just wilted, then chop.
In a large bowl, mix together eggs, egg whites, dill, salt, pepper, feta and cooked. vegetables
Use a shallow baking dish (square, but round would do). Preheat the oven to 350 and really grease the baking dish well with butter. Pour all of the ingredients once assembled into the dish and bake. I would suggest baking for about fifteen minutes and then checking. Check every five minutes thereafter. It seems to me it took about 20-25 minutes. It will be ready when the middle has risen up quite well and the surface is browning. You can alway stick a knife in the middle to test.
