Ingredients
1 lb beef shank or short ribs (more if bones are large)
5 or so Chorizo de Aviles sausage links (see recipe)
12-18 baby onions
1 t. Saffron
2-3 diced potatoes
2 cans drained garbanzo beans
salt to taste (at end!)
Fideo noodle nests (angel hair pasta will work in a pinch)
Preparation
Cut up beef and chorizo and brown in olive oil in a large pot. Add 2-3 quarts water, bring to boil, and simmer 2 hours. Add onions and saffron and simmer 1 more hour. Add potatoes and gabanzos and simmer 1-1.5 more hours (or until potatoes are soft). Add salt to taste. Cook Fideo noodles separately in broth (about 10 minutes). Add noodles and soup to bowls and enjoy!
