Ingredients
2 tbsp. vegetable oil
1 onion, coarsely chopped
2 carrots, peeled & coarsely chopped
1/2 Swede (peeled and cut into 1/2’’ cubes)
1/2 cup barley
8 cups beef broth
1 lb. broad beans
Preparation
Heat oil in a large pot. Saute onion, carrots and Swede for about 5-7 minutes, until onion is golden.
Add broth and broad beans and bring to boil. Reduce heat and simmer about 3 hours.
