Ingredients
4 medium cucumbers
1 TBS salt
1/2 white vinegar
3 hard boiled eggs
1/2 cup sour cream
1
tsp prepared mustard
2 tsp white wine vinegar
1/4 tsp sugar
1/8 tsp pepper
1 TBs parsley, dill or chives
Preparation
Peel and see dcucumbers. cut crosswise into 1/2" slices. drain. toss lightly with salt and vinegar until cucumbers are well-moistened. marinate at room temp for 30 minutes. drain and pat dry. Cut eggs in half. remove yolks and rub egg yolks through a sieve. cut whites into strips and add to cucumbers. slowly beat together sour cream, mustard, vinegar, sugar pepper and egg yolks until mixture is smooth. pour over cucumbers and toss lightly. refrigerate. sprinkle with herbs.
