Ingredients

Add to sourdough starter:

2 cups water

2 cups flour

1 teaspoon sugar

Muffins

1 1/2 cups whole wheat flour

1/4 cup non-fat dry milk

1/2 cup sugar

1 teaspoon salt

2 eggs

1 cup raisins

1/2 cup melted butter

1 teaspoon soda

Preparation

Place the flour, water, and sugar in a bowl with sourdough starter the night before you want to make the muffins.

Sift the dry ingredients into a bowl and make a well in the center. Mix the fat and egg into the sponge. Add the sponge to the dry ingredients and stir just enough to moisten the flour. Fill greased muffin tines about three-quarters full and bake at 375 degrees for about thirty-five minutes.
