Ingredients
12 - 2" wide strips of Chicken Tenders
1 Pineapple or may substitute 1 can Dole Pineapple Chunks
Marinade for Chicken:
1/2 cup - soy sauce
3/4 cup - vegetable oil
2 tbsp - disstilled white vinegar
3 tbsp - honey
1-1/2 tsp - garlic powder
2-1/2 tsp - ground ginger
1 tsp - coursley ground black pepper
1/2 tsp - crushed red pepper
3 - whole green onions split lengthwise and chopped
Preparation
Put all ingredients (except chicken and pineapple) in blender and pulse until mulsified. Makes about 3/4 cups. Cut chicken fillets into 2" strips and marinade in ziplock bag 12-24 hours. Drain chicken and thread one 1" chunk of pineapple on an 8 inch skewer all the way down to the end of skewer, then thread chicken on, and finish with another chunk of pineapple. Grill over hot coals until done (3-5 minutes per side).
