Ingredients

• 1 head of purple cabbage finely julienned

• 3 limes juiced

• 1 ½ cans tomato paste

• ¾ cups cilantro finely chopped

• 1 clove of garlic finely chopped

• Small bunch green onions finely julienned

• 2 teaspoons salt

• 1 tablespoon of sugar or honey

Preparation

Mix well all ingredients other than cabbage into a large bowl. Mix cabbage into this mixture with your hands.

Adjust seasoning to taste. (Salt, pepper, sugar)

Mixture should be liquidy enough to coat cabbage evenly without a lot of excess fluid.

Cover tightly and let sit in refrigerator at least 2 hours, but preferably overnight.*

*For best results, let sit 12 to 24 hours so acids break down the cabbage resulting in a softer product.
