Ingredients

4 cups shredded poached chicken breast

1 cup shredded green or napa cabbage

1 cup shredded red cabbage

1 red bell pepper - julienned

1 green bell pepper - julienned

1 large carrot - julienned

1/2 red onion - julienned

1/4 cup chopped green onion

1/2 cup chopped cilantro

1/4 cup chopped mint

1/4 cup unsweetened shredded coconut (optional)

1 large minced jalapeno (optional)

Crushed peanuts (optional)

Dressing:

1/2 cup lime juice

1/2 cup natural peanut butter

1 tbsp. soy sauce

1 tbsp. fish sauce

1 clove minced garlic

1 minced shallot

1/4 cup sucralose (Splenda)

Salt and fresh ground pepper to taste

Preparation

Combine chicken breast with cabbage, peppers, carrot, red and green onion, cilantro, mint, coconut, and jalapeno.

Whisk together dressing ingredients and combine with chicken vegetable mixture.

Top with crushed peanuts and garnish with additional cilantro and mint.
