Ingredients
For Crust:
1 Cup flour
1/2 cup butter, softened
1/4 cup confectioners’ sugar (I used slightly less)
(sometimes i add some lemon peel to the crust)
FOR FILLING:
2 eggs
! cup sugar (I use less)
Finely grated rind of 1 lemon (I use more)
3-4 TBSP lemon juice
2 TBSP flour
1/2 tsp baking powder
Preparation
Make Crust: Mix butter, 1 cup flour and 1/4 cup confectioners’ sugar into a soft dough and press evenly into the bottom of a 9 inch greased and floured square baking pan. (I doubled the recipe and used a 10 inch square pan)
Bake in the middle rack of a 350 oven for 20 minutes.
As this bakes, mix eggs, sugar, lemon juice and 2 TBSP flour. When crust is done, quicly whisk baking powder into the lemon mixture. Pour on the lemon topping and bake for 25 minutes more.
Let cool and dust with 2 TBSP confectioners’ sugar.
Yield: 25 bars a little less than 2 inches square.
